Food dilemma

Alright. Having an issue with HL that I welcome all suggestions/ comments on......

Please.

HL is an extremely picky eater. He talks about wanting to be "Healthy Eater Man" and turns down some sweets because they're "not healthy for you", but still refuses to eat anything other than the standard mac-n-cheese, peanut butter and cheese sandwich, cheese-only quesadilla, etc. (No worries about him getting enough calcium, eh?) But in the last several months he's been teasing us with "I want to try a ____" or "I'll eat ____". In the past we've fallen for it- made what he requested, fought with him, and ultimately wasted a lot of food.

So, we decided that if he convinces us to make something special, he has to at least try one bite before getting anything else. We started this yesterday when he fixed himself a "burrito" of cheese, a tiny bit of beans, and lettuce. He did finally try a single bite. After the shock wore off, we were very proud that he finally tried something new! That is, until he swallowed, gagged and spit it all out. Not quite the result we were hoping for.

Then we enforced our rule again today with a raw carrot. Certainly an innocuous little raw carrot wouldn't produce the same results, would it? It didn't. It actually made him vomit this time. Shiny.

The list of things we can't do:
-Ignore his requests- just in case he's earnest someday
-Make whatever he requests and waste food away
-Force him to try things and make him vomit
-Allow him to never try anything new

The list of things we can do:
-(Any ideas?!?)
